With Sfoglini, Steve Gonzalez and Scott Ketchum wanted to combine the best of America's slow and local food movements with traditional Italian techniques. The result is outstanding dried pasta made using organic, whole, North American grown and milled grains, bronze die extruded and slow dried for the best texture.
